This Week's Randoms

In an attempt to wrap up this week, here's some randomness from this week:

- Harrison's ready for Halloween!

- Can you figure out what's wrong with my calendar? Apparently it was the 25th on Monday and Tuesday...

- Did anybody watch Once Upon A Time on ABC?  Such a fun show! I'm totally a sucker for fairy tales. I'm looking forward to watching Grimm too.

- This blog post made my Mom cry. Happy cry. Love you, Mom!

- On a more serious note, something I learned this week is that everything happens for a reason, even bad things. Even things that seem to make so much sense aren't meant to be. I guess there's something better out there, I just don't know where to go from here.

What's for dinner... (6)

I can't believe it's already Thursday and time to link up with Mallorie at Home is with you... with "What's For Dinner?" This week has totally flown by! Anyways, let's get down to business. I did a couple different things in the kitchen this week. Nothing mind blowing, just different. 

I made some vegetarian chili (not from scratch, although I'd love to learn how to do that) with some corn bread.. it was so perfect on the cold day we were having here.

Eggs in a Basket is something that I love to make but really haven't in a while. If you don't know what that is, or if you call it by a different name, all you did is cut a hole in the center of a piece of bread and crack an egg in it. You just cook it in a frying pan.. I like to add some cheese on top too. It's soooo good, especially if you like runny eggs. If you don't like runny eggs, just give the egg a little scramble when you crack it. 

Last night, Jeremy and I made another batch of my Mom's macaroni and gravy.. the first time wasn't a fluke.. I guess I'm actually Italian after all! It was definitly just as yummy and delicious as the first time we made it.

I've been going through a pretty rough couple of weeks. Stress has totally taken over and I have been so negative. Normally I'm a very positive person but it's been so hard to find the positive things each day, it's been so much easier to focus on all the negative things. However, I need to change. I need this storm cloud to go away. I am truly very blessed. I need to just take a moment and be thankful for these wonderful blessings:

- A family who loves me and is there for me even though they're so far away.
- The telephone conversation I had with my brother a few days ago. We aren't very close, we're 5 years apart, but as we get older, the age gap shrinks and we become closer. It was really wonderful just chatting with him about things that were going on with us. 
- A boyfriend who sees how I am struggling and does everything he can to make it better. Have you seen the positive tweets that he sends me each day? He's amazing. 
- A job to go to each day that pays the bills. 
... and many many more.  
Everybody has their crosses to bear, however, it's important to remember to be thankful for the blessings you have. I needed this, I needed to focus on the positive things and realize things maybe aren't really all that bad. Life isn't easy, but there are people and things that make it absolutely amazing, be thankful for them.

Carving Pumpkins

... or Lumpkins (aka love pumpkins). Yes, Jeremy and I are dorks. Anyways, we finally got around to carving some pumpkins! I talked about it a little bit in this post but I can't really remember ever carving a pumpkin.. Jeremy, on the other hand, thinks this is a Fall tradition that everyone should do. 

Yes, that pumpkin is super lopsided.. I figured even lopsided pumpkins need love too.. so did Mittens apparently.

Tonight is the first game of the RiverKings season. Even though it is only a preseason game, I still have so much to do in what feels like so little time. When did the season get here so quickly? This is keeping me sane... along with a some encouraging texts :)

I have been so super swamped with work that I have literally not cooked a meal in my kitchen in a while. The only thing I did this week was bake brownies.. does that count? Anyways, if i had my way this is what I would have made this week...

Spinach Lasagna Roll-Ups with some Oreo cupcakes for dessert... yum.

Oh, How Pinteresting - Jack-O-Lanterns

When I mentioned to Jeremy that I really haven't done much pumpkin carving in my life I thought he was going to fall over. Apparently this is a tradition that he takes very seriously. It isn't Halloween unless you carve a pumpkin. Sometime before Halloween, we are going to be doing some pumpkin picking and carving! I'm pretty excited! I immediately turn to Pinterest for some ideas. I know my pumpkin won't even come close to looking like these BUT it's good to get some inspiration.

Every year on the first day of school for as long as I can remember my mom baked us brownies. Even when I was in college I received some homemade brownies in the mail on the first day of classes. It's one of the many memories that I love about my childhood. 

Well, since yesterday was the boy's first day at a new job, I baked him some brownies!! Peppermint Patty Brownies to be exact.. not trying to one-up you Mom, I swear. I was just feeling a little creative. 

and since it's Halloween time, the Peppermint Patties are orange... festive and delicious!

It's pretty crazy how things work out sometimes. Right after I blogged about how there wasn't enough kindness in the world, and how I wanted to try to be more selfless, I was lucky enough to be the one given kindness when I needed it.

To sort of introduce the story, I have a cat named Dexter (although Jeremy likes to call him Mittens). I got him when I moved down here a little over a year ago because this was the first time I had lived alone. It was kinda sad and lonely coming home to an empty apartment. Soooo I got a cat, and he is a crazy one. 

This leads us to today. Today, I got a phone call from the sweet old lady that lives in the apartment below me. She said she had my cat. What!? How in the world did he get out of my apartment! Well after thinking about it, I'm pretty sure he jumped out the window of my second floor apartment even though the screens are still intact... 

Anyways, she saw him outside our apartment building and knew he didn't belong outside even though she wasn't sure if he was my cat or not. She ended up getting my phone number off his collar and getting in touch with me. I wasn't able to get home for a few hours so between her and another extremely kind neighbor, they watched my cat all day until I came home.

I feel so lucky that they were watching out for me and went out of their way to help me and him. I don't know what I would have done if I had come home to an empty apartment. Probably freaked out a little.. I don't really want to think about it. 

Basically, I am so thankful and feel so blessed to have such wonderful people looking out for me. I don't know them other than a polite hello when we see each other outside, yet they were there for me today when I needed them. 


On a side note... and some more kindness.. I received the Versatile Blogger award from Sharon over at Life Reinvented in Phoenix.. thanks Shar, that was so sweet of you!!!

Tomorrow is a big day. Tomorrow you start your career. I admire your patience and your determination. You knew what you wanted and you did all you could to get it and now you're here. Tomorrow you will get up and you'll go to work and you'll be happy. 

It's not always going to be easy, I'm sure you'll have hard days, days where you don't know what you're doing. But overall, you're going to be happy.

I can't wait to hear all the stories and all the new things you're going to learn. Since I met you this is what you wanted. It's all coming together. You were faced with two doors.. two decisions that would lead you in two completely different directions. I know it wasn't easy, but I know you made the right choice.

So, good luck tomorrow! You worked so hard to get here. Enjoy it :)

Random Acts of Kindness

I found this story through Pinterest and I was completely blown away. It's a story of a woman who for her 38th birthday did 38 random acts of kindness. Reading the things she did and the reactions from people really got me all emotional. There isn't enough kindness in the world. This story has absolutely inspired me. I am guilty of being "too busy" or too self consumed to do a small thing for someone else. I'd like to change that.

This weekend, I am going to be sure to do at least one random act for someone else. A selfless gesture to make someone's day a little better. 

I'd love it if you guys would try this too... if everyone who reads this does one kind thing that they wouldn't have necessarily done, we are adding more kindness to the world than was there before. There can't ever be too much kindness.

What's for dinner... (4)

I was so good this week! I took pictures to link up with Mallorie at Home is with you...

On Sunday, I went to a baby shower (Congratulations Maria!!) but afterwards Jeremy and I whipped up some spaghetti using some gravy we had frozen from the last time we made a batch. Mom, since I know you now read my blog, it tastes so good even after being frozen! We did good :) We are definitely going to be making some more.

Monday, after a busy day at work (hockey season is approaching WAY too quickly), Jeremy told me he was bringing dinner over. His mom had made some vegetarian lasagna and sent me some. It was delicious! Last time I saw her she mentioned to me that she had found a recipe that looked pretty good... it really was! I even had some leftovers the next day for lunch.

I worked late on Tuesday, yuck, no fun. I ended up eating hummus at my desk hah how depressing. BUT to make up for it, when I came home, I baked a blueberry pie! Ok, I'll be honest.. I cheated.. I used frozen pie crust and canned pie filling. Sometimes though that's all you need. I would like to be able to make my own pies from scratch one day but for now, the fake stuff is working just fine for me.

Last night was a soup night.. nothing too exciting there! My Mom did call me and asked me some questions about our Mexican Crescents.. she was making them for dinner because she saw them on my blog. Too funny.

This week there wasn't much kitchen innovation but that's alright sometimes. I'm just happy that among all the busyness right now in my life I'm able to still have time to sit down and eat a meal at home.

Oh, How Pinteresting - Maxi Skirts

I love the look of maxi skirts, especially for the fall. I have been pinning so many lately, but I feel like I can't pull off this look.. I fear that I'll look Amish hah this might be irrational.. maybe I'll have to try it. Anyone have any good tips? Here's my inspiration:
